It’s the first really nice weekend of spring here in St. Louis so I’ve been grilling. I like to open the bbq season with a simple burger, so here’s what I came up with.
Make some large patties from 85% lean ground beef (I used ground chuck. Don’t use anything leaner than 85% or the burgers will turn out dry.) Salt and pepper them thoroughly. Grill them at medium heat until they’re medium-well and then transfer them to the oven to keep warm.
Chop green onions, mushrooms, and a clove of garlic and saute them together in olive oil until they are tender and delicious. Add salt and pepper as needed. Cut tomato slices and wash lettuce leaves. (Use good leaf lettuce, not iceberg or romaine.)
Split some good crusty/chewy rolls (I used beaucaire rolls from Companion Bakehouse) and brush them with olive oil. Toast them on the grill until they are golden with a little bit of char on the thin edges. Then construct the burger; onions and mushrooms on the bottom half of the roll, then the burger, then tomatoes and lettuce.
That’s all you need; the burger will do the rest.
